A Tale of Two Soybeans - How to Pack More Flavor with your Edamame

As some of you may know, I am a teacher. I luvv, luvv, LUVV my job, but it is so hard transitioning back from summer to school time. Waking up early, I'm pretty ok with; being with students all day, great! Reorienting myself to packing snacks and lunches?Terrible. Once I've gotten on my summertime schedule, a time when I just snacked whenever I wanted and made whatever random lunch I could, it's so hard to adjust back to my routine. Now I have to put those lunches together the night before, (aka the morning of), when I'm rushing around. To help myself stay healthy, and stay prepared, I've started prepping huge bags of edamame with different seasonings. Edamame is a quick, easy, and delicious way to get protein. But it can get tiring if it's all you eat as a snack. No fear though, I've come up with a way to spice up that edamame routine. By mixing up edamame with different flavors, and treating it almost like a chip in that way, I guarantee you won't get tired of its awesomeness. DSC_0473

DIRECTIONS

Buy a big bag of unshelled edamame from the freezer section of the store. If you go ahead and cook this bag, then you can divide it out into 1 cup sections. This recipe will be for those 1 cup serving sizes, but would be easy to adjust for less or more.

INGREDIENTS: SPICY EDAMAME

1/2 garlic clove 2 tablespoons of cilantro 1 tsp of cayenne 1 wedge of lime dash of salt 2 tsps of white wine vinegar DSC_0490 Once you've cooked your edamame and divided into the 1 cup servings, you will assemble all of your ingredients. Chop one half a garlic clove and then combine that, the cilantro, the cayenne, the salt, the white wine vinegar into the bowl with the edamame. Then mix. After all ingredients are mixed, squeeze the lime wedge.

I love letting the flavor seep in and then eating it later. I already loved edamame, but I crave this like nothing else.  Let this be your snacking solution.

INGREDIENTS: TANGY EDAMAME

1 tsp of sesame oil 1 tsp of ground ginger 2 tsp of soy sauce

Just like in the above recipe, you will combine these ingredients in your divided out edamame packs. This one is super quick and simple to put together (no cutting involved!). You will just pour the above ingredients on top of the edamame and stir. This give you a great tangy taste that isn't too overpowering. Ginger is a great spice to work in for your health anyway, so if you we're looking for more ways to add that into your diet, this is a great option.
