The ingredients for this recipe transform nicely to a seriously delicious salad and a wrap. This is one of my favorite new dishes and once you make it, you'll see why. PS Thanks for all of the love on the Chia pudding post! I love seeing what dishes you can't wait to make. It helps me direct my posts towards what you want! Blood Orange Winter Salad Ingredients Salad 2 cups of spinach 1 cup of crumbled goat cheese 1/2 cup of red onion 1/2 cup of black olives 1/2 cup of green olives 1/2 cup of blood oranges Blood Orange Vinaigrette 1/3 cup of fresh squeezed blood orange juice 1/2 cup of olive oil 1/2 cup of white vinegar 1 tsp of oregano 1 tsp of sea salt 1 tsp of Cavender's Directions It's a salad! Y'all can do this quick and easy. Cut up the red onion and then choose if you want to cut up the olives and blood oranges. I like my pieces smaller in my salad, but some of you may not mind. If you're in a rush, the pieces work well uncut as well. Now, when it says crumbled goat cheese, please try and find the pure crumbled goat cheese. I promise it will be so much creamier and yummier if you do that rather than buy regular feta. The goat cheese is crucial to bringing out some of the great flavors in blood orange. Also, you're going to make some awesome fresh vinaigrette to go with this and knock everyone's socks off. While you are cutting up the blood oranges, leave half aside to squeeze into a jar that you'll mix the rest of the ingredients into. After you have the fresh juice, mix in the rest of the ingredients and shake vigorously. Pour over the salad and enjoy! Blood Orange Wrap (The Above Ingredients) Tortilla Wrap Fresh Goat Cheese Avocado Now, if you plan on making the wrap, just double the above ingredients minus the goat cheese crumbles. You will keep all of the same ingredients, but you will add a goat cheese spread + avocado + tortilla. I made my wrap with the vinaigrette in it, but the goat cheese spread on the tortilla will be flavorful enough. Happy Eats My Sweets! Melinda
