Greek Cucumber Snack Bites with a Dill Vinaigrette - Keeping Cool this Memorial Day

I hope this weekend you are enjoying a well deserved break. It's going to be a weekend of sunshine (hopefully!), family, friends, and if you're lucky, delicious BBQs and potlucks galore. Keeping that in mind, I wanted to bring you luvvs an easy, delicious, and healthy treat to impress your friends or just yourself as you stuff these in your face (and don't feel a lick of bad about it because it's healthy!). I'm so into dill right now, it's such a fresh, cool herb that's perfect for summer. Although I used it here as essentially a marinade for the cucumbers, you could absolutely use this as a vinaigrette for salads! Dill Vinaigrette  2/3 cup of olive oil 1/2 cup of white wine vinegar 2 tablespoons of apple cider vinegar 2 tablespoons of freshly chopped dill Salt and Pepper to taste DSC_1512 DSC_1517 Directions  Combine all ingredients into a bowl and mix. Taste and see if you want to add more dill, salt, pepper, or vinegar. If you like it lighter add more vinegar and less oil. You know best the consistency you like your vinaigrettes. DSC_1541 Cucumber H'ors D'oeuvres Once you have the vinaigrette made, slice up however many cucumbers you will want to serve. If you're going to a large party, maybe buy about 4 or 5 cucumbers, if smaller maybe two or three will be enough. You will be using two cucumber slices per snack bites. DSC_1531 DSC_1550 Put your cucumber slices in a ziplock bag, and then pour the dill vinaigrette over the cucumbers. You can let this marinate for a few hours or overnight. It's best overnight, but sometimes you don't have enough time for that. Now you're ready to make your snack bites. In addition to cucumbers, you can use these ingredients interchangeably: Feta Kalamata Olives Cherry Tomatoes Or turkey/chicken if you want some meat. Chicken + dill = bomb.com DSC_1559 I made different versions of each of these, so that I could appease my future guest. You could even use this as "bar" piece,  have out the various toppings then let people top their cucumbers as you wish - cucumber snack bar! Once the cucumber snack bite has been assembled, it's time to put a toothpick in it and nommmmmm.
