Although there are many resolutions I made this year, one of my most important resolutions for 2014 (and every year always) is to try my hardest to not eat out. However, being a full-time teacher, some days that struggle is harder than others. One factor that really helps me fight the urge to go out is preparedness. Meals made in slow cookers, frozen meals, and the likes can help you not only save money, but also your sanity!One of the ways I like to stay prepared is to double or triple what I can make out of a meal. By using the same base and adding additional ingredients to that base, you can make your food work for you in many ways beyond the regular. In this recipe, I’ve taken a very basic dish - spaghetti, and turned it into so much more. Note- I do not include my recipe for spaghetti, just the recipe for the casserole. Most of you have your own spaghetti recipes, so make your own spaghetti and just double it. You'll use the leftovers to make this hearty (and oh so cheesy) casserole. Ingredients 2 -3 cups of leftover spaghetti & Sauce 1 package of cream cheese 10 basil leaves 1 cup of Italian cheese mix 1 ball of mozzarella (to be sliced) 2 tbsp of olive oil 2 tbsp of balsamic vinegar Directions
Set out your yummy spaghetti leftovers from the day (or two) before. Warm the spaghetti and sauce in the microwave for approximately 1 minute. You can either let the cream cheese warm to room temperature or blast it in the microwave as well for about a minute. The spaghetti and cream cheese both need to be warm in order to more easily blend together. Once they are warmed, mix the cream cheese and the spaghetti together in a large bowl. Pre-heat your oven to 350 degrees so it will be preheated before you put in the casserole. Grease a glass casserole dish, pour half of the spaghetti mixture into the casserole dish.Once half the spaghetti is in the dish, you will lay the basil leaves and your mozzarella on top. Then top with olive oil and balsamic vinegar. Now you will cover the rest of the dish with the remaining amount of spaghetti mixture. Cook this casserole for 25 minutes. After the twenty-five minutes, pull out your casserole and top with the Italian cheese mix. Cook for an additional 5 minutes until cheese melts. Let cool for a couple of minutes, serve and enjoy! Easy recipe that saves you lots of time. Serve with a baguette, or any other delicious bread choice.
