Lucky Black-Eyed Peas

Who is ready to get lucky with black-eyed peas this New Year's Day?  As many of you know, it's a tradition to eat black-eyed peas on New Year's day because they are supposed to bring wealth into the year. What you may not know is that there are many spices that are also considered to bring good luck. This recipe combines black-eyed peas with two lucky spices - cinnamon and ginger. All of these are thought to bring wealth and happiness into your life! However, a few years ago I tried some crunchy black-eyed peas at the Capital Bar and Grill. It's a free little appetizer they will give you upon request. I personally loveeeee these black-eyed peas, so for this recipe I wanted to give my own take on them. These black-eyed peas are easier for snacking, and easier to use as a topping in various other recipes. These would be great on a cabbage salad for those of you that like cabbage with your black-eyed peas as your New Year's tradition.

CRUNCHY BLACK-EYED PEAS

Ingredients 1 can of black-eyed peas cinnamon ginger salt pepper curry black-eyed peas, lucky black-eyed peas, crunchy black-eyed peas, cooked beans, new years, new years eve, good luck food, good luck spices, ginger, cinnamon, healthy snacks Directions Preheat oven to 425 degrees. Then dump out the black-eyed peas onto it. black-eyed peas, lucky black-eyed peas, crunchy black-eyed peas, cooked beans, new years, new years eve, good luck food, good luck spices, ginger, cinnamon, healthy snacks Now you will take your spices and sprinkle each equally over the entirety of the black-eyed peas. This works out to roughly a tablespoon per spice, but you have a lot of room for adjustment here. Then the beans should have a nice crunch and flavor to them!
