Merry Poppin' - Super Bowl Jalapeno Popper Dip

It's the weekend of the great American tradition of rooting for a team you may or may not care about, watching commercials that either leave you on the floor laughing or crying (I'm looking at you Budweiser horse), and eating copious amounts of awesome food. The dip I am sharing with you today is inspired by one of my personal favorite southern dishes - jalapeno poppers/armadillo eggs depending on who you ask. Every time someone makes these some gravitational pull sucks me in, and I literally can't leave them. I promise, if you make this, you will be the queen or king of the super bowl party. So good, my husband and I skipped dinner last night and just ate this instead. jalapeno popper, jalapeno, cream cheese, bacon As many of you luvvly readers know, I've been trying to incorporate meals that do double duty, as well as some awesomely delicious healthy dishes. Well, my recipe this week allows you to double time, and it's somewhat healthier than your average super bowl dish, Greek yogurt for the win! But, as they say, when in Rome.       Super Bowl Jalapeno Popper Dip 

     Ingredients

1 cup of crushed fritos 1 1/2 package of cream cheese 1 cup of Greek yogurt 5 minced jalapenos 1/2 cup cut of cilantro 1 minced clove of garlic 1/2 cup of cut up bacon 2 oz of green chiles Juice of half of lime 1/2 cup of fiesta blend cheese 1/2 cup of parmesan When I made this, I made both the poppers and the dip, because that's just how I roll (read: eat). If you are wanting to double your recipe I suggest doing this since you'll have all of the necessary ingredients. To make the poppers, de-seed as it says below, fill with cream cheese, wrap in bacon, and cook in the oven until bacon is crisp. If you're just wanting to make the dip, your first step is to cut the top of the jalapeno off, slice in half, and de-seed it. I always use a spoon for the seeding and just make sure to scoop the seeds and to de-vein. Once that's done, you will mince the jalapenos. Now, I made a frito underlayer, but  you could easily not do so. It will still be delicious without it. If you're trying to cut some calories, this would be a good place to do so. At beginning of making this you can set your cream cheese out to become room temp, or warm it up in the microwave. Now with your cream cheese in a bowl, you will combine in the Greek yogurt, jalapenos, green chiles, cilantro, garlic, bacon, and cheeses. Bake at 425 degrees for about 15 minutes. When you take it out of the oven, you can pour more cheese and bacon on top if you want. Then take the lime you've sliced and squeeze out half of the juice over the dip. I also took some jalapenos and sliced it up to look like a football. Themed food!
