Power Up - Orange Grapefruit PB2 Chia Breakfast Bars

So, I'm going to Florida for a girl's trip in just three short weeks! Which means 3 short weeks to be somewhat beach ready? Or at least more beach ready than this snowed in body currently feels. As I was dreaming of my recipe for today, I kept two desires in mind: I wanted to make something healthy,  and I wanted to make something energizing. These are great not only for breakfast, but also as a road trip snack. The ingredients to these bars are protein filled and provide natural energy, so they should keep you from automatically reaching for a different snack and energy drink at every gas station. So skip the snacks with crazy amounts of sugar and corn syrup and eat this instead! chia breakfast bars, chia seeds, oatmeal breakfast bars, clementines, grapefruit, pb2, powdered peanut butter Orange Grapefruit PB2 Breakfast Bars   Ingredients  3 cups of whole grain oats 1/2 cup of honey 1 cup of PB2 1/2 cup of water 2 tbsp of chia seeds 1/2 cup of chopped almonds (I used the toasted coconut ones I love!) 1/2 cup of clementines 2 tbsp of cinnamon the juice of half of a grapefruit   Directions  Pour the oats, honey, PB2, water, and chia seeds into a bowl. Mix until combined. Let me say here, I opted for using PB2 instead of peanut butter because it really helps you cut some calories from your peanut butter. I wasn't a believer at first - I thought, no way can this powder stuff taste like peanut butter, but guess what? It did! And I literally cut my calories by almost 85% by doing so. Miracle powder! You can find this in organic section at Kroger, but I'm sure you could find it at Whole Foods, health food stores, and the likes. Before you mix, squeeze your grapefruit juice over the mixture. Oranges, almonds, and grapefruit juice are all natural energizers filled with vitamins that make you and your body feel great. Both the grapefruit and orange are high in vitamin C keeping you feeling healthy and energized. Grapefruit in general has other great benefits: increasing metabolic rate, high fiber, large number of minerals. Anytime you can work grapefruit into your diet, do. The fiber from the chia seeds combined with the grapefruit juice will definitely keep you feeling satisfied longer than other foods. Thus keeping you from eating an entire bag of corn nuts in one sitting (What, is that just me? Don't judge! Cook for 15 minutes at 350 degrees and then divide into bars. This recipe yielded 18 breakfast bars. I can very easily see this becoming a staple in the Asewicz household. Simple to make, much more filling than other breakfast foods, and packed with all sorts of foods that make both my body and mind feel ready to conquer the day (or in the case of a road trip, a 17 hour drive!). I can't wait to experiment adding different fruits to this depending on what's in season.
