I'm alllllll about stretching meals into as many options as possible. So for this week, I took that spicy edamame and figured out two different ways you can turn this snack into a full-blown meal. I am seriously thankful to get to make these dishes for you. It causes me to challenge myself to prep my own means by helping you see how to stretch yours. I know that many of you face the same problems I do about prepping meals, but learning some simple tricks can go a long way. These recipes are great to be able to add simplistic variety to your weekly eating. Spicy Edamame Salad + Stuffed Avocado Directions Ingredients 1 cup of unshelled edamame 1 cup corn the juice of one lime 1 tbsp of white wine vinegar 1/2 tsp of cayenne dash of Salt 1 clove of garlic chopped cilantro Notice I started with unshelled edamame instead of the shelled one. It's going to be much easier to eat if you buy the unshelled ones for this!
Next add your garlic.
