Three Cakes to Rule the Holiday

It's that time again. Time to bake merry happy treats for coworkers, neighbors, and holiday parties galore. In the midst of the fast flurry that December is, it can be hard to fit in enough time to  complete all of the food making and gift wrapping on the agenda. I love this recipe because it allows you to make individual treats for people in your life without having to toil away for hours in the kitchen. One batch of these and you will have twenty-four treats to be wrapped as gifts or charm guests at a holiday party.

Holiday flavors are all about the nog, the mint, and of course - chocolate.  The tricky part of these signature holiday flavors is that you always know someone who doesn't like one of them, especially the ever controversial eggnog. Luckily, your guest or gift-receivers will have at least one flavor they love because these cakes celebrate flavor individuality.

The second best part (the first being the taste) of the recipes below is that they are of the mix and go variety.

Toss in the bowl and mix away!

**You will need a muffin pan for the following cakes

Egg Nog Upside Down Cake

Ingredients

Cake 

2 cups of flour 1 1/2 cup of sugar 2 eggs 1 cup of eggnog 5 tablespoons of butter (room temperature) 1 1/2 teaspoon of nutmeg 1 teaspoon of vanilla pinch of salt

Icing 3 tablespoons of butter 1/2 cup of brown sugar 1 tablespoon of eggnog

Directions

You will combine all of the cake's ingredients into a mixing bowl and mix until smooth (you can use a stand mixer or hand-held). Once you have your batter ready, you can begin on the frosting.

For the frosting, melt the butter in the microwave then combine the brown sugar and eggnog. I always mix this by hand as quickly as I can. Your frosting should be thick after mixing. If it isn't, add more brown sugar.

Once you have both the batter and the frosting prepared, spray your muffin pan with nonstick spray. After you spray the pan, you will pour the frosting into the individual muffin sections. Now here, because I think it's festive and delicious, I put a maraschino cherry in the center of the section. After that is done, pour the batter on top of the cherry and frosting. If you plan on making the third cake as well, leave about a third of the batter to the side.

Cook at 375 degrees for 30 minutes.

Garnish with crushed candy canes.

Chocolate Peppermint Velvet Cake

Cake 

2 cups of flour 1 1/2 cup of sugar 1/2 a cup of sour cream 1/2 cup of milk 1 cup of semi-sweet chocolate chips 2 eggs 6 tablespoons of butter 2 tablespoons of unsweetened cocoa 1 1/2 teaspoon of pure peppermint extract

Icing

5 tablespoons of butter 2/3 cup of confectioner's (powdered) sugar 1/2 teaspoon of pure peppermint extract

Directions

Much like the one above, this is a toss and mix recipe. Combine all of the above cake ingredients and mix until well blended.

For the frosting, melt the butter and combine the next two ingredients. Mix until it is thick. The recipe for this frosting should yield more because you can use this for this recipe as well as the one below. Just as above, spray your muffin pans with nonstick spray, pour the frosting, and then pour the batter. If you plan on making the final cake, leave a third of your batter to the side.

Cook in the oven at 375 degrees for 40 minutes.

I garnished this one with some peppermint chocolate bark and candy cane.

Peppermint Choconog Cake

Directions

Combine the batters you have left to the side. Mix together. For this one, you will use the leftover peppermint frosting. Once you have sprayed your muffin pan, pour the frosting in first and then the batter.

When the cakes are done baking, allow about 10 minutes to cool. After the cooling, you will take a knife or spatula around the edges of the cake. Then take the cake and flip it upside down. What you see from the top of the muffin pan should be the bottom of the cake itself. Garnish the cakes according to what you like.

Everyone loves a little special attention in the holiday season.

1) Combine all of the cake ingredients and then mix until well blended.

2) For the frosting, melt the butter and then combine the next two ingredients. Mix until it is thick. 3) Spray muffin pan with nonstick spray and pour the frosting into the bottom sections. Then pour the batter.  4) Cook at 375 degrees for 40 minutes.

5) Garnish with some peppermint bark or melting chocolate.

Peppermint Choconog Cake 1) Combine ⅓ of each of the above batters and mix. Then use the leftover frosting from the Chocolate Peppermint Velvet Cake. 2) Spray muffin pan with nonstick spray and pour the frosting into the bottom sections. Then pour the batter.  3) Cook at 375 degrees for 40 minutes.

4) Garnish with a combo of deliciousness.
