Ok luvvs, time for some real honesty here. I am a foodie, a foodie that in the truest tradition of foodies just really loves FOOD. Now, because of this love of food, I sometimes get distracted from dishes that are marketed as "healthy" alternatives. There are some great healthy dishes out there, I just always have a hard time finding one that makes me want to put the brownie down. However, being full of resolutions this year, I am trying to get into better patterns of eating/exercising for my health. Thus, a challenge was born: make healthy food that you actually like, not healthy food you are eating because someone told you it was healthy and would promise great rewards like perfect skin, body, and the likes. Thus Chia Pudding was created!
Also, I am trying for the next food weeks to give you food that can easily be created into other dishes. Last week was the Leftover Spaghetti Casserole that took spaghetti and allowed you to make an additional casserole with the leftovers. This week, I'll show you how to take the Chia seed pudding dessert and turn it into a lovely breakfast smoothie.
For those of you that have never cooked with Chia seeds, I highly suggest researching the benefits of them. You can easily buy them in the organic section of any grocery store. Surprisingly, TJ Maxx home goods section almost always has them too (and for cheap!). They are essentially the health motherload and have an incredibly flexible flavor. Give them a shot with this pudding. Health and Nutella together in one? That's a recipe worth trying.
Nutella Coconut Chia Pudding
2 cups of Almond Milk**
1/3 cup of Chia Seeds
1/4th cup of Shredded Coconut
2 tablespoons of Nutella
1/2 teaspoon of Vanilla
**You can use regular milk as well, but almond milk is a healthier alternative
Coconut (Or any other fruit you like with Nutella)
First, find a container that you will be able to seal. In order for the chia seeds to become gelatinous in the recipe, they will need to sit in the fridge in a sealed container for at least four hours. Just use the sealed container to mix the recipe in so you save yourselves some dishes! Your Nutella can either be warmed from siting out, or zapped in microwave for about 30 seconds. You want it to be warm so that it can mix more easily. Pour the almond milk into your container and then mix in the warmed Nutella. After that, pour in the chia seeds and vanilla. Once all of the ingredients are in, seal the container and shake, shake, shake. Then refrigerate overnight or for at least four hours. When you are ready to serve, top with whatever fruit you like. I am seriously obsessed with raspberries + chocolate so that's why I went with them, but any fruit that pairs well with Nutella will work.
Double Timin' - From Pudding to Smoothie
Nutella Coconut Chia Seed Smoothie
1/2 Chia Pudding from above, hand full of raspberries, on banana and ice.
You will need a blender to make this smoothie, so first step - get those blenders out!
Combine the pudding, raspberries, banana and ice. Blend. Boom. Perfect smoothie for your morning routine. This will be filled with protein and fiber. Enough to keep you full and energized until lunch.
What I love most about this dishes is that it really proves how delicious being healthy can be + how great it feels. I need that reminder as I tackle trying to get back on a healthier path. What? Healthy food that is good? I know, prove it right? Let the recipe prove it to you.

Printer Friendly Nutella Coconut Chia Pudding Ingredients 2 cups of Almond Milk** 1/3 cup of Chia Seeds 1/4th cup of Shredded Coconut 2 tablespoons of Nutella 1/2 teaspoon of Vanilla
Directions Set out Nutella until it's room temp (or zap for 30 seconds in microwave). Combine Nutella, almond milk, chia seeds, coconut, and vanilla. Shake vigorously. Refrigerate 4+ hours. Top with fruit and fresh shredded coconut.

Directions Using a blender, combine all of the above ingredients. Mix and enjoy!
