I've got to say it, gotta get it off my chest: I used to be among those who stick their nose up at pimento cheese. My family loved it, and me, albeit without trying it, decided that the orange mixture was just not my thing. Being the stubborn person I am, I kept this uninformed opinion for many years. Until one night at the Capital Bar and Grill. If you've never been to the Capital Bar and Grill in Little Rock, you're missing out. Seriously amazing cocktails and burgers, but more than that, they have a grilled pimento cheese sandwich that is worthy of being requested as your last meal on death row. Once I tried it, my mind about pimento cheese completely opened up. I've now tried who knows how many different restaurants' versions. For some reason though, there's been a part of me afraid to conquer the pimento cheese realm. Maybe I just worried I couldn't do it justice. But I did, and am now here to share with you the result of many a-tinkerings on the average pimento cheese recipe.
Spicy Red Pepper Pimento Cheese Ingredients 1/2 Greek Yogurt 2 oz of Sliced Pimentos 1 cup of Shredded Cheese 1/2 of Jalapeno 1/2 of Red Pepper 2 Garlic Cloves 1 teaspoon of Apple Cider Vinegar 1 teaspoon of Dijon Mustard 1 teaspoon of Cavender's 1 teaspoon of Cayenne 1 teaspoon of Paprika 1 tablespoon of Bacon Bits
Gather your garlic cloves, red pepper, and jalapenos. You will chop these up as tiny as you can. You will sautee these vegetables. Remember when sauteing you want low heat and to take your time so that your vegetables turn almost translucent but not burnt.
After you have sauteed your vegetables, you will combine your sauteed vegetables, greek yogurt, pimentos, and cheese. Then you will combine the rest of the spices.
Oh man, this is SO easy. Mix everything together, but don't mix too much, you don't want your spread to become watery. If it is watery, add a little more cheese. Chill and serve however you'd like. I love that this is healthier with Greek yogurt. A lot of the "skinny" recipes call for Greek yogurt + mayo, but it is perfectly delicious without any mayo at all!
